Halloween Hangover

I don't know if any of you are like me but this past week, a "healthy" choice for a snack has been this:
it counts as a fruit right? ;)

instead of something like this:

I'm not really ready to go full blown healthy and snack on only this:but would anyone mind sharing their "healthy" snacks...or better yet healthy dinner ideas? I'm the worst eater but maybe a few small changes would help? Right now my healthy snack is cashews but they are getting kinda old. So if you'd like to help me out leave a comment or post your own favorite healthy snack on your blog. Please...I'm tagging all of you out there... :)

These are my 2 favorite new dinner recipes...and they are pretty healthy, too! my fav. semi healthy snack is zucchini or banana bread.mmmm...

Sunburst Chicken Stir Fry
1 can chunk pineapple
2 cloves garlic
2 T. vegetable oil
1 Green Pepper (I always replace the green pepper with edamame beans)
3 green onions
1 chicken breast
2 T. ginger (I only use 1 T. - otherwise it is way too gingery for me)
2 carrots
4 oz. cooked spaghetti (I use rice - only because that is Eduardo's favorite. I also never measure the rice. I just make about 3 cups, and add it in when the stir fry is finished)

Sauce: (Mix all together in preparation to add to chicken and vegetables)
1/3 c. pineapple juice
1 T. cornstarch
1/3 c. soy sauce
1 T. oil

Fry chicken with ginger for 2 minutes. Add pineapple, carrots, peppers (or edamame). Cook 2-3 minutes . Add sauce and green onions, and finally the rice/spaghetti.

Creamy Chicken Apple Chili
1/4 c. olive oil
2 lbs. chicken tenders
4 t. chili powder
2 t. ground cumin
Salt and pepper
2 bakingapples cut into 1/2 inch cubes
1 onion chopped
4 T. butter
1/4 c. flour
2 c. chicken broth
3/4 c. milk
2 15 oz. cans pinto or white beans, rinsed
2 c. shredded monterey jack cheese
Toasted tortillas or tortilla chips
Chopped scallions, for garnish

1. In a large Dutch oven, heat 2 T. olive oil over med. high heat. Add the chicken, chili powder and cumin. Season with salt and pepper and cook, stirring, for 5 minutes; transfer to a bowl.

2. In the same pot, heat the remaining 2 T. olive oil. Add apples and onion and cook, stirring, until softened, 6 minutes; add the chicken

3. In the same pot, melt the butter over med.-low heat. Whisk in the flour for 1 minute; whisk in the chicken broth and milk until thickened, 3 minutes. Stir in the chicken-apple mixture and beans, bring to a simmer, then stir in the cheese. Serve with the tortillas and scallions.

I just discovered that I love the 100 calorie little bags of microwave popcorn. You can eat the whole bag and it fills me up. I'm trying to eat better too. It's hard, all the good stuff is not too good for ya. We'll have to swap more ideas sometime.
